Instructions

Step 1: Make the Graham Cracker Crust

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan.
  4. Bake for 8–10 minutes until lightly golden. Remove from the oven and set aside to cool.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Gradually add sugar, flour, and vanilla extract, beating until fully combined.
  3. Add eggs, one at a time, mixing on low speed until just incorporated. Do not overmix.

Step 3: Bake the Cheesecake

  1. Pour the cheesecake batter into the cooled graham cracker crust.
  2. Bake at 350°F (175°C) for 50–60 minutes, or until the center is set but slightly jiggly.
  3. Turn off the oven and let the cheesecake cool inside for one hour to prevent cracks.
  4. Transfer to the refrigerator and chill for at least 4 hours or overnight.

Step 4: Caramelize the Bananas

  1. In a skillet, melt butter over medium heat.
  2. Add the sliced bananas and brown sugar, cooking for 2–3 minutes per side until golden brown.
  3. Sprinkle with cinnamon and set aside to cool.

Step 5: Make the Brown Sugar Glaze

  1. In a small saucepan, combine brown sugar and water.
  2. Bring to a gentle simmer, stirring continuously.
  3. Cook for about 2 minutes, or until the sauce thickens slightly. Remove from heat.

Step 6: Assemble the Cheesecake

  1. Once the cheesecake is completely cool, arrange the caramelized bananas on top.
  2. Drizzle with the brown sugar glaze for extra sweetness.
  3. Serve immediately, or refrigerate until ready to enjoy.

Tips & Tweaks

  • Want a Different Fruit? Try caramelized pineapple, mango, or peaches for a twist.
  • Make It Ahead – The cheesecake can be made a day in advance for better flavor and texture.
  • Extra Garnishes – Top with whipped cream, chopped nuts, or an extra dusting of cinnamon.
  • Prevent Cracks – Bake the cheesecake in a water bath by placing the springform pan in a larger pan filled with hot water.
