These sliders are a fun and flavorful twist on the classic Philly cheesesteak. Made with tender diced chicken, sautéed onions and peppers, and gooey melted cheese, they’re perfect for parties, game days, or an easy family dinner.

Ingredients:

  • For the Filling:
    • 1 pound boneless, skinless chicken breasts or thighs, diced into small pieces
    • 1 tablespoon olive oil
    • 1 medium onion, thinly sliced
    • 1 green bell pepper, thinly sliced
    • 1 red bell pepper, thinly sliced
    • 2 cloves garlic, minced
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon smoked paprika (optional)
    • 1/2 teaspoon salt (adjust to taste)
    • 1/4 teaspoon black pepper
  • For the Sliders:
    • 12 slider buns or Hawaiian rolls
    • 8 slices provolone cheese (or mozzarella or American cheese)
    • 3 tablespoons unsalted butter, melted
    • 1 teaspoon Worcestershire sauce
    • 1/2 teaspoon dried parsley (optional, for garnish)
    • 1/2 teaspoon garlic powder

Optional Add-ins:

  • Sliced mushrooms for extra flavor
  • Jalapeños for a spicy kick
  • Mayo or mustard spread for the buns

Instructions:

  1. Prepare the Chicken Filling:
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the diced chicken to the skillet and cook for about 5–7 minutes, until browned and fully cooked. Remove the chicken from the skillet and set it aside.
    • In the same skillet, add the onions and bell peppers. Sauté for 5–6 minutes until they are soft and slightly caramelized. Add the garlic and cook for another minute until fragrant.
    • Return the chicken to the skillet and season with garlic powder, onion powder, smoked paprika (if using), salt, and black pepper. Stir to combine and let the flavors meld for 2–3 minutes. Remove from heat.
  2. Assemble the Sliders:
    • Preheat your oven to 350°F (175°C).
    • Slice the slider buns in half horizontally without separating them. Place the bottom half of the buns in a greased or parchment-lined 9×13-inch baking dish.
    • Spread the chicken and pepper mixture evenly over the bottom half of the buns.
    • Layer the provolone cheese slices over the chicken mixture.
    • Place the top half of the buns over the cheese layer.
  3. Prepare the Butter Topping:
    • In a small bowl, mix the melted butter with Worcestershire sauce, garlic powder, and parsley (if using).
    • Brush this mixture generously over the tops of the slider buns.
  4. Bake the Sliders:
    • Cover the baking dish with aluminum foil and bake for 10 minutes.
    • Remove the foil and bake for an additional 5–8 minutes, or until the tops are golden brown and the cheese is fully melted.
  5. Serve:
    • Remove the sliders from the oven and let them cool slightly before slicing and serving.
    • Serve warm, and enjoy these cheesy, savory bites with a side of chips, fries, or a fresh salad.

Storage:

  • Leftover sliders can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10 minutes for best results.
