Spread the love

This chocolate strawberry swirl cheesecake combines a rich chocolate cookie crust, a creamy vanilla cheesecake base, and a beautifully marbled swirl of fresh strawberry puree and chocolate syrup. The result is a silky-smooth, indulgent dessert perfect for special occasions.

Ingredients

For the Chocolate Cookie Crust

  • 1 ½ cups chocolate cookie crumbs (Oreos or chocolate graham crackers, finely crushed)
  • ½ cup unsalted butter, melted

For the Cheesecake Filling

  • 2 packages (8 oz each) cream cheese, softened (Full-fat cream cheese works best for a rich, creamy texture.)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs, at room temperature

For the Strawberry & Chocolate Swirl

  • 1 cup fresh strawberries, pureed (Blend fresh strawberries until smooth. Strain if you prefer a silkier texture.)
  • ¼ cup chocolate syrup (Use high-quality chocolate syrup for the best flavor.)

Instructions

Step 1: Preheat the Oven & Prepare the Pan

  1. Preheat your oven to 325°F (160°C).
  2. Lightly grease a 9-inch springform pan with butter or non-stick spray.
  3. For extra security against leaks, wrap the outside of the pan with aluminum foil if you plan to use a water bath.

Step 2: Make the Chocolate Cookie Crust

  1. In a medium bowl, combine:
    • Chocolate cookie crumbs
    • Melted butter
  2. Stir until the crumbs are evenly moistened.
  3. Press the mixture firmly into the bottom of the springform pan using the back of a spoon or a flat-bottomed glass.
  4. Bake the crust for 8-10 minutes, then set aside to cool while preparing the filling.

Step 3: Prepare the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese until smooth and fluffy using a hand or stand mixer on medium speed.
  2. Gradually add sugar and vanilla extract, mixing until fully incorporated.
  3. Add the eggs one at a time, mixing on low speed after each addition.
    • Do not overmix; this can introduce too much air and cause cracks during baking.

Step 4: Swirl in Strawberry & Chocolate

  1. Pour half of the cheesecake filling over the cooled crust.
  2. Drizzle half of the strawberry puree and half of the chocolate syrup over the top.
  3. Use a knife or skewer to gently swirl the toppings into a marbled pattern.
  4. Repeat with the remaining cheesecake filling, strawberry puree, and chocolate syrup.
  5. Swirl again for a beautiful layered effect.

Step 5: Bake the Cheesecake

  1. Place the cheesecake in the preheated oven and bake for 55-60 minutes, or until the center is just set but still slightly jiggly.
  2. Optional Water Bath for a Creamier Texture:
    • Wrap the bottom of the springform pan in 2-3 layers of foil.
    • Place the pan in a larger baking dish and fill with hot water (about 1 inch deep).
    • This prevents cracks and creates a smoother texture.

Step 6: Cool & Chill the Cheesecake

  1. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually.
  2. Transfer the cheesecake to a wire rack and let it cool completely at room temperature.
  3. Refrigerate for at least 4 hours, preferably overnight, to fully set.

Serving & Garnishing

  1. Run a knife around the edges before releasing the springform pan.
  2. Garnish with:
    • Fresh sliced strawberries
    • A drizzle of extra chocolate syrup
    • Whipped cream or chocolate shavings

Tips for the Perfect Cheesecake

1. Prevent Cracks in the Cheesecake

  • Use a water bath or place a pan of water on the rack below the cheesecake to create steam.
  • Do not overmix the eggs to avoid excess air in the batter.
  • Let it cool gradually in the oven before transferring to the fridge.

2. How to Get the Best Swirl Effect

  • Use a spoon or squeeze bottle to evenly drizzle the strawberry and chocolate.
  • Swirl lightly with a knife in a circular motion for a marbled look.

3. Storing & Freezing

  • Refrigerate leftovers in an airtight container for up to 5 days.
  • Freeze whole or sliced cheesecake for up to 3 months. Thaw in the fridge overnight before serving.
