Ingredients:

  • 1½ pounds russet potatoes – Diced into ½” cubes. Russets are ideal as they become crispy on the outside while staying soft on the inside when fried.
  • 1 pound smoked sausage – Choose your favorite smoked sausage (like kielbasa or andouille) for a rich, flavorful bite.
  • 2 tbsp olive oil – For frying, or use butter for a richer, more indulgent flavor.
  • 1 medium onion – Thinly sliced. The onions will caramelize, adding a sweet, savory flavor to balance the smokiness of the sausage.
  • Salt and pepper – To taste. You can adjust these based on your preference, but the sausage already adds some saltiness.
  • 1/4 tsp garlic powder – Optional but adds depth and an extra layer of flavor.
  • 1/4 tsp smoked paprika – Optional, for a subtle smoky undertone, enhancing the flavor of the sausage.
  • Fresh parsley – Chopped, for garnish. It adds a pop of color and a fresh flavor contrast to the dish.

Instructions:

  1. Prepare the Potatoes:
    • Wash and peel the potatoes (optional). If you prefer a rustic texture, leave the skins on.
    • Dice the potatoes into ½-inch cubes. This size allows them to cook evenly while getting crispy on the outside.
    • Parboil the potatoes: Place the diced potatoes in a pot and cover them with cold, salted water. Bring to a boil and cook for about 5-7 minutes until they are just starting to soften but are still firm. The parboiling step ensures they cook evenly and become crispy when fried. Drain the potatoes and set them aside.
  2. Cook the Smoked Sausage:

  4. Fry the Potatoes:

  5. Combine and Serve:
