Hearty Tuscan White Bean Soup Recipe

Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary (or 1 sprig fresh rosemary)
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups vegetable or chicken broth
- 2 (15-ounce) cans white beans (cannellini or Great Northern), rinsed and drained
- 1 (14-ounce) can diced tomatoes (optional for a tomato-based version)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 2 cups kale or spinach, chopped (remove stems if using kale)
