Ingredients

For the Meatloaf:

  • 2 large eggs
  • ½ cup ketchup
  • ½ cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper

For the Mac & Cheese Layer:

  • 3 cups elbow macaroni noodles
  • 2 cups milk (whole milk preferred)
  • 10.5 oz condensed cheddar cheese soup (1 can)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 4 cups shredded cheese blend (mozzarella & cheddar mix)

For the Sauce:

  • ½ cup ketchup
  • ½ cup Sweet Baby Ray’s barbecue sauce

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish and set aside.

Step 2: Prepare the Sauce

  1. In a small mixing bowl, combine ½ cup ketchup and ½ cup barbecue sauce.
  2. Set aside for later use.

Step 3: Make the Meatloaf

  1. In a large mixing bowl, add the ground beef.
  2. Crush the Ritz Crackers and add them to the bowl.
  3. Add the Lipton onion soup mix and 2 eggs.
  4. Pour in ½ cup of the ketchup and barbecue sauce mixture.
  5. Mix everything together until well combined.
  6. Press the meat mixture evenly into the prepared baking dish.
  7. Spread the remaining ketchup-barbecue sauce mixture over the top of the meatloaf.

Step 4: Bake the Meatloaf

  1. Place the dish in the oven and bake for 30 minutes.
  2. While the meatloaf bakes, prepare the mac and cheese layer.

Step 5: Cook the Macaroni

  1. Cook the elbow macaroni according to package directions.
  2. Drain and set aside.

Step 6: Make the Cheese Mixture

  1. In a large mixing bowl, whisk together milk and condensed cheddar cheese soup until smooth.
  2. Add salt, pepper, garlic powder, and onion powder.
  3. Stir in the cooked macaroni and 2 cups of shredded cheese.
  4. Mix well until fully combined.

Step 7: Assemble and Bake Again

  1. After the meatloaf has baked for 30 minutes, remove it from the oven.
  2. Pour the mac and cheese mixture over the top and spread it out evenly.
  3. Sprinkle the remaining 2 cups of shredded cheese on top.
  4. Return to the oven and bake for 17-20 minutes, or until the cheese is melted and slightly golden brown.
