Ingredients

For the Strawberries:

  • 20 large fresh strawberries – Choose firm, ripe, and evenly-sized berries for best results.

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened – Brings a rich, creamy texture.
  • ¼ cup (50g) powdered sugar – Sweetens the filling without being too heavy.
  • 1 teaspoon vanilla extract – Enhances flavor with a warm, sweet aroma.
  • ¼ cup (60ml) heavy cream – Helps create a fluffy, airy filling.

For the Topping:

  • ½ cup (50g) graham cracker crumbs – Adds a classic cheesecake crust texture.

Instructions

Step 1: Prepare the Strawberries

  1. Wash & Dry – Thoroughly rinse the strawberries under cold water and pat them completely dry with a paper towel.
  2. Hollow the Strawberries
    • Use a paring knife or small spoon to carefully remove the green tops.
    • Scoop out a small cavity in each strawberry, ensuring it’s deep enough to hold the filling but not too deep that the strawberry loses structure.
    • If needed, trim a small portion off the bottom so the strawberries stand upright when served.

Step 2: Make the Cheesecake Filling

  1. In a medium-sized bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  2. Add the vanilla extract and heavy cream, then beat for another 1-2 minutes until the mixture is light, fluffy, and holds its shape.

Step 3: Fill the Strawberries

  1. Transfer the cheesecake mixture into a piping bag (or a ziplock bag with the corner snipped off).
  2. Pipe the cheesecake filling neatly into each hollowed strawberry cavity, filling them generously.

Step 4: Add the Graham Cracker Crumbs

  1. Sprinkle the graham cracker crumbs over the filled strawberries.
  2. Lightly press the crumbs so they adhere to the filling for that classic cheesecake crunch.

Step 5: Chill & Serve

  1. Arrange the stuffed strawberries on a serving platter.
  2. Refrigerate for at least 30 minutes to allow the filling to set slightly.
  3. Serve chilled and enjoy the perfect balance of creamy, fruity, and crunchy flavors!

Optional Variations & Toppings

Chocolate Drizzle – Drizzle with melted dark, milk, or white chocolate for an extra indulgent touch.
Nutty Crunch – Sprinkle crushed nuts (almonds, pecans, or pistachios) over the filling.
Berry Mix – Mix in some lemon zest or mashed raspberries into the cheesecake filling for a citrusy twist.
Caramel Swirl – Add a drizzle of caramel sauce over the stuffed strawberries.

Storage & Shelf Life

  • Refrigeration: Store in an airtight container in the fridge for up to 2 days.
  • Freezing: Not recommended, as the strawberries may release water and soften.
